Offer to do an hour and a half to two hours for free one night. Explain to the manager that if people respond well to it and you get good feedback, then the next day you can discuss payment and all that. I didn't have any restaurant experience before I went in for my gig, but I performed a lot at school for my friends, and my family was great practice. My mom got me a few gigs at her work during their office meetings, and after all that I felt really confident in my skills. That's what it's all about, confidence. If you believe in yourself, the potential client will see that. The worst thing they can say is no, and they are the one's losing out on a great asset. Let us know how it goes! Good luck!
